【News】 Agriculture ministry launches certification system for ‘washoku’ chefs abroad (June 2, 2016)
The Ministry of Agriculture, Forestry and Fisheries will set up a system to certify chefs of Japanese cuisine, or washoku. The ministry announced a logo mark for the system on Wednesday, June 1. Washoku has recently been gaining popularity worldwide and was recognized by UNESCO as an Intangible Cultural Heritage in 2013. However, there are cases in which chefs who have not received proper training on Japanese cooking serve food that are far apart from traditional washoku. The system is aimed at improving the quality of washoku chefs by certifying those who have acquired the basics of washoku cooking. The certification is offered in three levels: bronze for those who … Continue reading

【Opinion】U.S. rice industry’s concerns over the TPP agreement (May 31, 2016)
[By Masaru Yamada, The Japan Agricultural News Senior Special Writer] The rice industry in the United States is not satisfied with the Trans-Pacific Partnership agreement. While they won liberalization of the Japanese rice market through the agreement, U.S. rice farmers apparently think the deal also means there is a possibility of them losing the Mexican market, their biggest customer. To understand their situation, we should be aware that the U.S. rice industry is made up of two completely different regions. One is the southern part of the country which cultivates 80 percent of rice grown in … Continue reading
