Japanese restaurants serving unique vegetable-rich dishes to help you survive hot summer

Tokyo, Aug. 31 – Dishes using plenty of vegetables will help you beat summer fatigue and sharpen your appetites. So, restaurants in Japan are offering highly satisfying dishes targeting a wide range of customers, including those who are concerned about nutritional balance and those who want something with more meat. They are suggesting making it a habit to choose a vegetable-rich diet.

With Green is a restaurant chain headquartered in Chuo Ward, Tokyo, famous for serving super-large bowls of salad that satisfy everyone’s stomach. It recently opened many new restaurants and grew in the number of outlets from 10 in 2020 to more than 30 in August 2024.

It added two new summer specials in July and August: a bowled summer vegetable salad with chicken seasoned with over ten kinds of spices and a bowled salad with spicy keema curry and amanatsu Japanese summer orange. One of its regular menus, a bowled salad of ten types of 350-gram vegetables, is also popular as it meets the daily dietary need for vegetables.

Vejiro is a fried vegetable specialty franchise with four outlets: three in Tokyo and one in Osaka. They serve combo menus, such as 400 grams of fried vegetables with several pieces of fried chicken. Vejiro Ikebukuro Higashi-Guchi shop in Toshima Ward, Tokyo, is a small shop with seats at a counter only. Still, it has 200 customers daily, primarily male customers in their 30s and 40s.
